Sweet Potato Fries


3 or 4 large sweet potatoes
salt to taste


Scrub sweet potatoes and cut into long thin strips, about 1/4 inch thick. Place in ice water for about 15 minutes. Preheat deep fryer. Remove sweet potato strips from water and pat dry with paper towels.

Place in deep fryer or large kettle of oil that has been heated to 350 degrees. Fry for about 5 minutes or until golden brown. Remove from oil and drain on paper towels. Sprinkle with salt and serve. Great served with a spicy tomato ketchup, barbeque sauce, seasoned mustard, a squeeze of lemon or other sauces of your choice.
