California Raisin Pumpkin Bread


1 c. vegetable oil
3 c. light brown sugar
4 eggs
1 1/2 tsp. nutmeg
1 1/2 tsp. cinnamon
1/4 tsp. salt
1 1/2 c. canned pumpkin
1 c. water
1 c. raisins
3 1/2 c. flour (1/2 white and 1/2 whole wheat)
2 tsp. baking soda


Beat oil, sugar and eggs. Blend in spices, pumpkin and water. In another bowl, mix flour, soda and raisins. Stir flour mixture into creamed mixture. Mix thoroughly. Pour batter into two greased loaf pans. Bake in 350 degree oven for just about 1 hour or make 3 smaller loaves and bake at 350 degrees for about 45 minutes.
