Zucchini Quiche


1 1/2 lb of zucchini, grated and well drained.
4 medium eggs, beaten.
1 1/2 cups of grated sharp cheddar cheese.
1 cup of grated Swiss cheese.
1 cup of chopped red onion.
1/2 cup of half and half cream.
1 tablespoon of all-purpose flour.
1 tablespoon of butter.
1/4 teaspoon of salt.
Pinch of black pepper.


Squeeze excess moisture from zucchini.

Saut, the onion in butter until wilted.

Mix the cheeses, zucchini and onion together.

Add the remaining ingredients; mixing thoroughly.

Pour into a lightly greased nine-inch pie plate (no need for a crust).

Bake in 350F (175C) oven for 30 mins or until a toothpick inserted in the middle comes out clean.
