Greek Spinach Quiche


2 (10 oz.) pkg. frozen chopped spinach
3 eggs
1 c. half and half
1 c. crumble feta cheese (4 oz.)
2 tbsp. chopped scallions
1/2 tsp. salt
1/4 tsp. pepper
Pinch of nutmeg
1 unbaked 9 inch pie shell


Defrost spinach; squeeze out all water. Beat eggs in half and half in bowl. Add cheese, scallions, salt, pepper, and nutmeg. Pour into unbaked pie shell. Bake at 400 degrees for 10 minutes, then lower heat to 350 degrees for 25 minutes or until quiche is set.
