Green Chile Quiche


Pastry shell
1 1/2 c. grated Jack cheese
1 1/2 c. grated cheddar cheese
4 oz. can diced green chilies
1 c. half and half
3 eggs, slightly beaten
1/4 tsp. salt


Bake shell about 12 minutes. Remove from oven and sprinkle with all the jack cheese and half the cheddar cheese. Sprinkle green chilies over cheeses. Mix eggs with half and half, and salt and pour mixture over chilies. Sprinkle rest of cheddar cheese over top. Bake 45 to 50 minutes at 350 degrees or until center is set. Let quiche cool 10 to 15 minutes before serving.
