Waffle House Eggs

2 eggs
3 Tbsp Vegetable oil

Beat 2 eggs quickly with a spoon in a glass bowl. Pour from bowl into a hot aluminum pan that has about 3 Tbsp vegetable oil. Scramble with the spoon.

For cheese eggs:

Repeat the above then dump the cooked eggs directly from the aluminum pan into a little iron skillet that you have heated on low then added 1 or 2 slices of "American" cheese. Just mix it up and it is done.

I promise, nothing else, no seasoning at all. *the cheese is slightly melted in the iron skillet then the cooked eggs are just stirred in. you may want to oil the iron skillet the tiniest bit. Bless you. You must be hungry. Grins and love.
