Caramel Rhubarb and Dumplings


3/4 c. packed brown sugar
1/4 c. sugar
3 tbsp. cornstarch
3 tbsp. butter
3 c. sliced rhubarb
1 1/4 c. flour
1/4 c. sugar
1 1/2 tsp. baking powder
1/4 c. butter
1/3 c. milk
2 tsp. sugar
1/4 tsp. cinnamon


Combine 1 1/4 cups water, brown sugar, 1/4 cup sugar, cornstarch and 3 tablespoons butter. Add sliced rhubarb and cook until thickened. In a bowl, combine flour, 1/4 cup sugar, baking powder and 1/4 teaspoon salt. Melt butter and add to dry ingredients with milk. Mix just until blended. Drop by tablespoonfuls onto hot rhubarb, cover and cook 12 minutes without lifting cover. Stir together sugar and cinnamon and sprinkle over dumplings. Serve warm. Serves 8.
