Corned Beef & Slaw Sandwich

These reuben-type sandwiches are easy to make when ingredients are purchased at the supermarket deli.

4 slices whole wheat bread, toasted
8 teaspoons spicy brown mustard
8 ounces thinly sliced deli corned beef
1/2 pint vinaigrette deli cole slaw
4 slices Swiss cheese
Heat oven to 350F. Spread each slice of bread with 2 teaspoons mustard.
To assemble each sandwich, layer 1 slice bread, 2 slices corned beef, 14 cup cole slaw and 1 slice cheese.
Place sandwiches on ungreased baking sheet. Bake for 8 to 10 minutes or until cheese is melted. Serve warm.
Makes 4 servings.
