Stuffed Flank Steak

Ingredients:

1 flank steak
Salt
Pepper
Flour
STUFFING:
4 c. bread cubes
2 sm. onions, chopped
3/4 c. chopped celery
1 1/2 tsp. sage
3 tbsp. butter


Preparation:

Note: Stuffing will expand.

Have flank steak scored highly crosswise. Sprinkle with salt, pepper. Dredge with flour. Pound in well. Combine, moisten with water and season. Spread stuffing over flank steak. Roll meat and tie or fasten edge with toothpicks.

Brown in fat. Add 1 1/2 cups water. Cover pan and cook in moderate oven (350 degrees) about 1 1/2 hours or until tender. Baste meat occasionally.

Serves 6.
