Chocolate Zucchini Cake


3 c Flour
1 1/4 tsp Baking powder and baking soda
1/4 tsp Cinnamon
4 Eggs
3 c Sugar
1 1/2 c Oil
3 Squares unsweetened chocolate
1 1/2 tsp Vanilla
1/2 tsp Almond extract
3 c Grated zucchini
1 c Nuts
1/2 c Chopped dates


Sift flour baking powder, baking soda salt and cinnamon. Set aside Beat eggs till frothy. Add sugar and oil, then chocolate, vanilla and almond. Fold in dry ingredients. Add zucchini, nuts and dates. Pour into greased 10 inch tube pan. Bake 350 for 1 hr 15 minutes. Let stand inverted on cake pan for 20 minutes. Serves 10-12
